FundRaiser staff has more than one 'foodie' among its ranks, so there was no problem coming up with a recipe that we wanted to give a try at the local Chili Cook-Off recently. Quite a lot more debate went into the name of the chili...
At the end of the day, we took home the first prize for Booth, and had a fantastic time cooking up our pot ot Dragon's Breath Chili. Here you have it, not too hot, but with a little something special about the taste.
Makes about 9 quarts of chili.
Brown 2 pounds of lean hamburger.
Add 3 large onions, chopped, and stir & cook until onions start to clear.
Add 4 ounces chopped garlic (or one whole head) and cook for 2-3 minutes more while stirring.
Stir in the following spices and cook for 3-5 minutes while stirring frequently;
1 Tbls plus 1 1/2 tsp. black pepper
4 Tbls ground chili
3 Tbls cumin
1 Tbls plus 1 1/2 tap. garlic powder
1 Tbls coriander, crushed
1 Tbls. turmeric
3/4 tsp. cumin seed, crushed
3/4 tsp. salt
1/2 tsp. sugar
1/4 heaping tsp. cinnamon
Add the following ingredients;
1 1/2 cup chicken broth
2 - ten ounce cans of green chilies, chopped
3 - 28 ounce cans of diced or crushed tomatoes
3 - 26 ounce cans of black beans
1/4 cup lime juice
Simmer gently for at least an hour (longer for a more robust thick chili), stirring frequently.
About fifteen minutes before serving add 3 Tbls. Garam Masala, stir well and simmer until served.
